From the Kavalan Distillery in Yilan County, Taiwan, this single malt is matured in Spanish oloroso sherry casks and bottled at cask strength of 55.6%, without colouring or chill-filtration. Taiwan's subtropical climate drives rapid maturation, giving remarkable richness. It is clean and complex, with layers of dried fruit, nuttiness and spice, plus touches of marzipan and vanilla. Add a few drops of water to open it up.
