Clairin is Haiti's traditional cane spirit, and Sajous is one of its best-known expressions, made by Michel Sajous at Distillerie Chelo in Saint-Michel-de-l'Attalaye. It is distilled from fresh sugar cane juice, fermented with wild yeasts and bottled unaged, so the character of the cane shines through. Expect a bold, grassy and vegetal spirit with notes of green fruit, pepper, citrus and brine. Excellent in a Ti' Punch or Daiquiri.
